Chicken Fajitas

Ingredients
  • 4 organic free-range chicken breasts, sliced

  • 6 tbsp chili powder

  • 6 tbsp cumin

  • 2 tsp garlic powder

  • 1/2 cup arrowroot

  • 8 tbsp coconut oil

  • 6 tbsp Tamari soy sauce

  • 2 red bell pepper sliced

  • 2 green bell pepper sliced

  • 2 yellow onion sliced

  • salt and pepper to taste

  • 1 cup each Forbidden rice and refried beans

Instructions
  1. In a bowl, mix chili powder, cumin, garlic powder and arrowroot, and also cut the chicken into strips. Coat chicken in 4 tbsp oil and roll in the chili powder mixture. Marinate the chicken for 30 minutes in fridge.

  2. Heat 2 tbsp oil in an iron skillet over a medium heat, and saute bell peppers and onions, adding soy sauce about midway through the fry. Remove from pan but do not clean pan. Add the rest of the oil and saute chicken until done, adding a touch more tamari midway through the fry.

  3. Top the chicken with the veggies and serve with sides of Forbidden rice and refried black beans.
