Shredded Cabbage, Beet, Fennel and Apple Salad

Ingredients
  • 1/4 head green cabbage, shredded

  • 1/4 head of red cabbage, shredded

  • 4 medium red beets

  • 1 thinly sliced head of Fennel

  • 1 thinly sliced Granny Smith (or any tart) apple

  • 1/3 cup roasted walnuts

  • Apple Cider Vinaigrette, recipe HERE

Instructions
  1. Slice the beets, toss in olive oil and roast at 325 degrees for 1 hour. After the beets are finished and are cooling, prepare the dressing and other salad ingredients. Combine the ingredients and dressing and toss to coat. Serve.
