Spicy Gingersnap Almond Cookies

Ingredients
  • 1 1/4 cups blanched almond flour

  • 3/4 tsp ground cinnamon

  • 3/4 tsp ground ginger

  • 1/2 tsp ground allspice

  • 2 tsp ground cloves

  • 1/2 tsp vanilla

  • 1/4 tsp salt

  • 1/4 tsp baking powder

  • 1/4 cup of coconut

  • 1/4 tsp powdered stevia

  • 1 egg white

  • 1 tablespoon water

Instructions
  1. Combine almond meal, salt, spices and baking powder in a bowl. Stir together stevia and water in a smaller bowl and then add vanilla, egg and oil and combine. Mix wet ingredients into dry. Form 1/2 inch balls and press onto a parchment paper lined cookie sheet. Bake at 350° for 5-6 minutes. Cool and serve.
