Spinach Maria

Ingredients
  • 2 lbs of fresh spinach, blanched and chopped

  • 1-1/2 lb ricotta

  • 1 cup (plus an extra 1/3 cup) raw sharp cheddar, shredded

  • 1/2 cup coconut milk

  • 2 tbsp organic cream

  • 1/2 cup Parmesan or Romano, grated

  • 2 egg yolks

  • 1 tsp Sriracha chili sauce

  • 1/4 tsp red pepper flakes

  • salt and pepper to taste

  • 1/3 cup almond meal

  • 4 tablespoons butter, cut into small cubes

Instructions
  1. Preheat the oven to 350 degrees. Blanch spinach for 2 mins. (can use frozen spinach but the fresh is so much better). Drain well and dry spinach in paper towels to get as much moisture out (can use cheese cloth as well). Put in bowl and add all other ingredients. Let sit for 15 minutes for all the flavors to meld together.

  2. Pour into glass oven baking dish oiled with coconut oil. Bake for 20 minutes. Meanwhile, combine almond meal, shredded cheddar and butter pieces. Pull from oven after 20 mins and top with the almond meal mixture. Bake for another 15 mins or until the topping melts and the rest is bubbly.
