Turkey Sausage, Apple and Coconut Bread Stuffing

Ingredients
  • 1 loaf of homemade coconut bread

  • 2 cups wild rice

  • 1/4 cup melted butter

  • 2 tbsp coconut oil

  • 1 pound of turkey sausage, cooked and crumbled

  • 2 small granny smith apples, peeled and chopped into small pieces

  • 1 cup chestnuts, chopped

  • 1 cup walnuts, chopped

  • I cup onion, chopped

  • 3 stalks celery, chopped

  • 3 cloves minced garlic

  • 1/4 cup apple cider

  • 6 eggs

  • 1 cup coconut milk

  • 1 cup chicken stock

  • 2 tbsp poultry seasoning (or more to taste)

  • Salt and pepper

Instructions
  1. Cube bread into small cubes. Brown the sausage in coconut oil and remove from pan. Add butter to the pan and saute the onion, celery, chestnuts, apples and garlic.

  2. Add all ingredients into large bowl and blend together. Always make sure you taste before you bake and season appropriately. Put in buttered pan, and bake at 350 degrees for 20-30 minutes. Test for doneness.
